Settled down with a coffee in the Blue Belle Cafe, I waited for Erica to rustle up a regular’s veggie hash breakfast. The results of her labour looked delicious but I was there to work not scoff. We had to fit the shots around a steady stream of customers coming and going, such is the personable nature of Erica’s enterprise, but it was a leisurely process and on a cold february day, I was more than happy to hang out in a cosy cafe.
