This September marks 100 illustrious years of the Women’s Institute, and what better way to celebrate the nations best bakers, than with a special centenary recipe adorning the cookery pages of the membership magazine, WI Life. Devised and baked by 2013 GBBO winner Frances Quinn, this citrusy, frosted take on the classic Victoria Sandwich is sure to get those ovens pre-heating.
Decorated with Frances’ signature little gold-flecked marzipan bees (she instructs how to make the marzipan also), and stenciled initials in the organisations trademark green complete with celebratory candle, the cake looks truly beautiful. Having spent the morning ogling, it seemed only fair to sample the taste too which was equally scrumptious. In Frances’ usual clever way, the cake consists largely of 100grams of each ingredient, so it’s actually pretty easy to remember.
